1 pound shelled edamame (typically frozen; defrost before assembling salad)
1 can corn, drained
1 red pepper, diced
1/2 cup scallions, sliced
1/2 bunch of cilantro, chopped
1/4 cup apple cider vinegar
1/4 cup olive oil
1 teaspoon garlic, minced
